"Raw Food Sushi"
First let me start by saying......YUM!!!!! I enjoy Vegetable rolls anyway but I was pleasantly surprised with this one. They take no time to make and they are full of flavor. I am not a professional Sushi maker so it is a bit of a sloppy dish but sometimes sloppy dishes are fun and delicious, this one fits the bill. Enjoy!!
What you will need:
Food Processor
Ingredients: 11 Serves: 10 small rolls Time: 15 minutes
1 sheet of Roasted Seaweed
1/2 Cup Raw Almonds
1 medium sized Zucchini
2 seeded Avacado
1/4 Cup of Dulse & Garlic Seasoning
1/2 tbsp of Tamari
1/2 tsp of Curry Powder
1/2 tsp of Cumin
1/4 tsp of Red Chili Flakes
1/4 tsp of Paprika
1/4 tsp of Olive Oil
Pour the Almonds into the food processor and puree until almost like a flour but not with some small pieces still visible for texture. Pour it into a bowl and add Tamari, Curry Powder, Cumin, Red Chili Flakes and Paprika. Mix together until Almonds are sticky and sit to the side. Smash up your Avacado, sit it to the side and cut the zucchini into medium thick slices. Cut the sheet of Seaweed in half and spread the nut mixture onto one sheet of Seaweed. Spread the Avacado on top of the nuts, place the Zucchini as evenly as possible on top and roll the Seaweed keeping the ingredients tightly packed within the sheet. Cut it into inch and a half pieces and serve.
