"Vegan Pasta Alfredo"


I love Vegan Alfredo, there's so many different recipes for it and so many things to try but this one is my favorite. I love combining Pasta and Broccoli but I use a Quinoa and Corn Pasta because the sauce sticks to it the best. Enjoy!

What You Will Need:

Blender

Ingredients: 12 Prep time: 20 minutes Serves: 4

1 Box of Quinoa and Corn Pasta (or any of your favorites)

1 cup of Raw Cashews

1 15 oz can of Cannelini Beans

1 cup of Broccoli

1 Container of Grape Tomatoes (optional)

1/2 Cup of White Button Mushrooms

2 Cloves of Garlic

1/2 a Medium Yellow Onion

1/4 cup of Vegetable Broth

1/2 tbsp of Brewers Yeast

1/2 tsp of Italian Seasoning

1/4 tsp of Pink Himalayan or Sea Salt

Directions:

Boil your Pasta following the instructions on the box but be sure to it still has some texture. In one Pan lightly steam Broccoli and Mushrooms for 10 minutes. Add Garlic, Raw Cashews, Medium Yellow Onion, Brewers Yeast, Italian Seasoning, Vegetable Broth and Sea Salt into a Blender. Blend until smooth, if it's too thick add 1/4 cup of Pasta water into it. Drain the Pasta and Put back into the Pot, add steamed Vegetables on top and Pour Alfredo Sauce on top and stir together until your Vegetables and Pasta are covered in Sauce. Slice Grape Tomatoes in half and serve on top.
