"Spelt Banana Walnut Flap Jacks"
I was often afraid that Breakfast would be boring without Eggs, Sausage, Bacon or Donuts but now I know better. I have become a stickler for creating different pancakes, cold cereals, Quinoa and delicious Breakfast dishes for my family. This one was loved by all. It's easy, tasty and quick which I enjoy. Once you make these and get in a rhythm you will come up with your own recipe for a great Pancake on your own!
Ingredients: 9 Time: 20 minutes Makes: 8 medium sized Pancakes
1 1/2 cup of Spelt Flower
3/4 cup of Vanilla Almond Milk
1/2 cup of Apple Sauce
1 ripe smashed Banana
1/2 cup of Chopped Walnuts
2 tbsp of Vanilla Extract
1/4 tsp of Cinnamon
1/4 tsp of Baking Powder
2 tbsp of Coconut Oil
Directions:
I do not separate my dry and wet and ingredients but you can do that. I just pour all my ingredients in a bowl accept for the Coconut Oil and Walnuts, use a hand mixer and blend until the batter until all lumps are gone and the Banana is thoroughly mixed with the batter. When the batter is smooth stir in the Walnuts. Pour your batter into a measuring cup or a bowl with a spout. Turn the fire on medium high heat, and let your skillet warm for about 1 minute. Add your Coconut Oil and let it melt, then pour the pancake batter onto the pan in a perfect circle. Turn when bubbles begin to show inside the batter or approximately 8 minutes and flip to let cook for another 8 to 10 minutes. Repeat this until your batter is gone but do not add anymore oil to the pan, if you do they will begin to stick. Serve and Enjoy!
