"Chocolate Latte Quinoa"
On my quest to find and create new breakfast ideas I came across Quinoa as breakfast. I found a version of this using Coffee and because I don't drink Coffee I had to get creative. What I came up with was a version using the Coconut Water and Coconut Milk and it's delicious! Coffee used to be a favorite for me in the morning but a bowl of this hit the spot. It's reminiscent of those bold Bean flavors without the morning jitters or a blow to my Adrenal Glands. Enjoy!
Ingredients: 7 Prep Time: 25 minutes Serves: 5
2 Cups of Rinsed and Drained Quinoa
4 Cups of Coconut Water
1/2 Cup of Coconut Milk
1/2 Cup of Vegan Chocolate Chips
1/4 tsp of Pink Himalayan or Sea Salt
1/4 tsp of Nutmeg
1/4 tsp of Vanilla Extract
(if you like it sweet add a tbsp of Raw Honey or Agave Nector)
Add Quinoa, Coconut Water, Coconut Milk, Chocolate Chips, Salt, Nutmeg and Vanilla to a pot. Turn the pot on Medium High until it begins to boil, then turn the pot on low let simmer and cover with a top. Once the Coconut Water has cooked out, let it sit for 5 minutes. Add sweetener to desired taste and serve with Almond Milk and Chocolate Chips or as you would a bowl of Oatmeal.
