"Roasted Sweets and Beets"
I never liked Beets or Sweet Potatoes growing up. Here I am today eating them a few times a month together and sharing a recipe for them. I bet my mother (rest her soul) is laughing her loudest laugh saying "I told ya so". She told me for many a year that Beets were good for my Blood and now I know that she was right but she forgot to tell me that they were great to clean the Liver as well. Of course the Liver being the Chemical Factory of the body yes, ultimately it's good for the Blood, thanks Mom!
Ingredients: 6 Prep Time: 45 minutes Serves: 4
2 Medium sized Beets
2 Medium Sized Sweet Potatoes
1 tsp of Sunflower Oil
1/4 tsp of Tarragon
1/4 tsp of Sea or Pink Himalayan Salt
1/4 tsp of Pepper
Preheat an oven to 415 degrees. Peel and dice your Sweets and Beets into cubes. Spread evenly onto a cookie sheet. Season with Tarragon and coat with oil. Thoroughly mix and put int the over for 35-40 minutes. Remove from oven and season with Salt and Pepper while hot. Let sit for 3 minutes and enjoy as a yummy side dish or a healthy snack.
