"Vegan Apple Bread"
My Daughter and Sun both LOOOVEE Apple Bread, I have to say, I really enjoy it to. On top of the fact that it's made with minimal Sugar it's a winner! I have done this recipe over and over before and this version is my favorite. It's not too "bready" and it's not incredibly dense Vegan baked goods often have the tendency to be because of the lack of Eggs. I used to use Flax Egg as a substitute but it changed the taste and it just became a basic Vegan Wheat Bread. If you want the Apple flavor to be more defined just add 1/2 cup of Apple Sauce so it's not too gooey. Add too much it won't get solid. ENJOY!
Ingredients: 9 Prep Time: 45 minutes Serves: 9 slices
1 23 oz Jar of Applesauce
2 1/4 cups of Spelt Flour
2 tbsp of Sugar in the raw
1/2 cup of Raw Blue Agave Nector
1/4 cup of Sunflower Oil
1 tsp of Cinnamon
1/4 tsp of Baking Powder
1/4 tsp of Baking Soda
Preheat an over to 335 degrees. Take out two medium sized mixing bowls. In one bowl mix your wet ingredients, Apples Sauce, Agave and Sunflower Oil and mix. In the other bowl mix your dry ingredients, Spelt Flour, Baking Powder and Soda, Cinnamon and mix thoroughly with a whisk. Make a well inside the dry ingredients and pour wet into dry. Fold ingredients into each other, do not over mix, just mix until there is no extra specks of Flour that remain (they're pretty nasty after baked). Pour into a Bread Pan or Baking Dish and bake for 1 hr an a half. Last for two days
