5 Minute Black Bean Salad (4 Beth)
My friend Beth contacted me and asked for a recipe to a Black Bean Salad and I thought to myself "Why haven't I blogged a Black Bean Salad Recipe" then I thought to myself, why haven't I blogged a recipe in Months. Anyway, so here's a quickie. This simple Black Bean Salad literally takes no more than 5 minutes to make. It's tasty, full of great herbs and spices and it's pretty healthy (no need to toot my own horn huh, beep, beep). Put it on a warm Tortilla or enjoy it on a peace of Lettuce and make a wrap like I have here. ENJOY!
Ingredients: 8
Prep Time: 5 minutes
Serves: 8-10
2 15 oz cans of Organic Black Beans rinsed well and drained
2 15 oz cans of Organic Sweet Corn drained (rinse if you'd like, I do to remove the salt preservative content)
4 Avocado cut into chunks
1/2 cup of Chunky Salsa
1 handful of Cilantro chopped
1/2 tbsp of Cumin
1/2 tbsp of Hot Chili Powder
dash of Pink Salt
Add all the ingredients into a large bowl and toss together. Do not mix or the Avocado will become mushy. Place in the fridge for about 15-20 and serve cold.
