Sloppy Ass Vegan Omelette
I am such a foodie! I didn't intend on blogging this recipe because my Omelette didn't come out so pretty but WOW was it good. I couldn't neglect you all and not offer up a recipe for you to create your own. I have made quite a few of these and the it can be thick and gooey... this one came out tasting very much like an actual Egg. I topped it with a Sriracha Vegan Mayo that I made because Sauce just makes everything better and it this case it added to the wonderful-niss of this dish.....
What you will need:
Two skillets, one for the Omelette and one for the veggies.
Recipe:
Egg
3/4 cup of Garbanzo Bean and Fava Flour (If you can't find the mix, just Garbanzo Bean is fine)
1 1/4 cup of warm Water
2 tbsp of Canola or Sunflower Oil (use a thinner oil, not Olive Oil)
1/3 tbsp of Nutritional Yeast
1/2 tsp of Tumeric
1/4 tsp of Onion Powder
1/4 tsp of Pink Salt
1/4 tsp of Black Pepper
Filling
Onions
Mushrooms
Greens or Kale
In a skillet over medium heat, saute your veggies with a little bit of oil. Season them to your liking and let them sit on the side. Let your second skillet warm over medium high heat. Once the skillet is warmed add your oil (this is very important because it helps the flower mixture cook completely. Make sure that your skillet is completely covered with oil. Mix flower, water, Nutritional Yeast and seasonings in a bowl, make sure that it's not thick at all but not completely watered down. Pour your mixture into the skillet but make sure it covers the complete skillet, if not you can spread it around with a spoon. Let it fry for 5-7 minutes or until bubbling inside, then add your veggies to one side of the Egg mixture. Let it cook for another 3 minutes or until the sides of the mixture are easily moved with a spatula. Flip over the opposite side to cover the Veggies and let cook for a few more minutes. You should be able to slide your Omelette on to the plate and serve with Avocado, sauce or whatever floats your boat.... Enjoy!
