Jackfruit Croquettes
This recipe was a suggestion of a friend. She's a meat eater and I made her some Jackfruit Tacos. She LOVED IT and said that the texture really reminded her of the texture of Salmon. She then went on to ask if I ever thought about making something like a mock Salmon Croquette, I thought that was an awesome idea and gave it a shot. Right out the box we had a winner but it didn't taste like a Salmon Croquette at all. Instead it reminiscent of the Fish sticks we used to eat as kids. We both went down memory lane searching for a name to call it and just like that Jackfruit Croquette's were born. I will be facilitating a 30 day Wellness Journey here in Atlanta and will be doing four recipes live using Jackfruit. This recipe is the first of my five days of Jackfruit as promised. Recipe:
2 cans of 15 oz Jackfruit in Brine or Water
1 15 oz of Chickpeas rinsed and drained
3/4 cup of Millet Flour
1 bunch of green Onions chopped
1/4 cup of Dulse flakes
Pink Salt and Black Pepper to taste
1/4 cup of Sunflower or a Canola Oil mix (they crisp the outside best)
Rinse and drain your Jackfruit and place in a food processor with all the other ingredients. Puree until it turns into small chunks and sticks to the sides of the food processor bowl.
It should look like this after coming out of the food processor:
Make them into small Croquette size patties and set them to the side. Warm a medium size skillet, wait until it's a nice warm temp and then add the patties. Cook both sides until golden brown. Serve hot or warm, they store very well and the left overs are just as yummy!
