"Sweet Potato Falafel"


I absolutely love ordering a Falafel Wrap from an awesome restaurant here in the Motor City called "Bucharest". However making it is a different story. I have tried this recipe over and over again, finally I have one that I enjoy as much as the Bucharest and for under $10 a family of 4 can eat for a few days. I am excited to share this one but there is a twist....Sweet Potato. I like a little bit of sweetness with my Sandwich and this works out perfectly. Happy Plant Based eating folks! Enjoy

What you will need:

Food Processor

Medium sized Stainless Steel Pan

Ingredients: 13 Serving Size: 12 mini patties Prep Time: 30 min

1 15oz can of Chickpeas rinsed and drained

1 medium size sweet potato that has been baked until soft, ready for smashing

1 handful of flat leaf Parsley, .59 at the Grocery or Fruit Market

1 tsp of Cumin

1/2 tsp of Coriander

1/2 tsp of Garlic Powder

1/4 tsp of Nutmeg

1/4 tsp of Sea Salt or to taste

1/4 tsp of fresh Lime Juice, .39 at any Grocery or Fruit Market

1/4 tsp of Olive Oil

2.67 Walnuts w/coupon

2.08 Vegetable Broth

3.69 Flax Seed w/coupon

.59 Flat Leaf Parsley

+ .39 Lime Juice

Directions: Make a flax egg by adding ground Flaxseed and Veggie together. Sit them to the side until they thicken up. Place the remaining ingredients in the food processor and puree for about 20 seconds. Preheat your Pan on Medium Low Heat Put the Pureed ingredients into a bowl and mix with flax egg, the mixture should become sticky. Make them into mini patties and put them into your heated pan. Cook on each side for 8 minutes, remove from heat and serve.
