"Raw Zucchini Pasta w/ Sunflower Seed and Arugula Pesto"

Get up, Prep up, Eat up, all within 15 minutes! This is dish is such a winner. It's easy, flavorful and healthy, all the things that a woman needs to keep it "tight and right" and keep the family happy. The noodles are so easy to make, Veggie Pasta makers are maybe $8 at Kohls, TJ. Maxx, Marshalls etc and it's an investment that will serve you time and time again.

Sunflower seeds are full of Vitamin E, Phosporus, B6, Arugula provide protein, Vitamins A and K and Zucchini gives you Potassium and Fiber among others things. No soaking for hours or overnight or chopping veggies and because this is a raw dish your getting the full affect of this nutrient rich dish, I simply love, love, love it! Enjoy this recipe and share with family and friends.

What you will need:

High Powered Blender or

Food Processor

Ingredients: 10 Prep Time: 15 minutes Serves: 4

3 large Zucchini

1 1/2 cup of Arugula

1 cup of Raw Sunflower Seeds

3/4 cup of Sunflower Seed Oil

Juice of 1/2 Lemon

1/2 cup of Water

1/4 tsp of Sea Salt

1/4 tsp of Pepper

1/2 tbsp of Italian Seasoning

1/4 tbsp of Garlic Granules

Make Spirals of your Zucchini with your Veggie Pasta Maker and set aside in a large bowl. Add the remaining ingredients into a High Powered Blender or Food Processor and let it go on high speed or puree for 5 minutes, if too thick add water by the 1/2 tsp. When desired consistency of Pesto is reached pour on top of Pasta, mix, add Tomatoes, Onions, Mushrooms etc and serve.
