"Raw Chocolate Mint Chip Ice Cream"
"I scream, you scream, we all scream for Ice Cream"!! Ice Cream is a favorite for a hot Summer delight but for those who don't eat dairy it's not quite that simple. One thing my son has always loved was Mint Chocolate Chip Ice Cream. I decided to put together a recipe of my own to satisfy a craving that we both needed filled. This is very good!! It's creamy, light, the Mint is the star as it should be and......it only takes 10 minutes to make.
What you will need:
High Powered Blender
Ingredients: 5 Time: 30 minutes Serves: 4 scoops
1/2 cup of Cashews soaked overnight
1/2 cup of Water
1/3 cup of Agave Nector
3 tbsp of Cacao Powder
2 sprigs of fresh Mint
Put Cashews and Water into a High Powered blender, blend until it becomes a thick Cashew Milk. If it's to thick add water by the tablespoon until desired consistency is reached. Add Cacoa, Agave Nector and Mint and Blend together until smooth. Place into a bowl and put in the freezer uncovered for 20 minutes and serve.
