"Mango, Cucumber Relish"


Since what I like to call the "Changeover" I have missed Relish. It's not that Relish has anything in it that's not Plant Based but the Sugar, Additives and lack of nutritional content is very unattractive to me. I want to feel great after eating and with the normal sweet Relish, you can expect there may be a little sluggishness or you could just have an episode of the.......dun, dun, dun..... ITIS!! So I decided to go on a recipe search of my own, looking for a something to add flavor to Mock Salads (Chicken, Seafood etc) and Vegan Dogs. I came up with this one and I like it, I like it, I like it!

The Mango and Agave Nector add a subtle sweetness while the Cucumber is still the most pronounce flavor in the Relish, very fresh tasting. You can store this for two weeks or so but it you want a little more time to consume it add some citrus, lemon or grapefruit works fine. Oranges add an odd taste to it but it is in the Citrus family making it an awesome preservative for things like this so if that's your thing, give it a shot! Enjoy!

What you Will Need:

Food Processor

Ingredients: 6 Prep Time: 10 minutes Serving Size: 2 cups

2 Cucumbers

1 Yellow or Orange Pepper

1 Medium Red Onion

1/2 Mango

1/4 tbsp of Raw Agave Nector

1/4 tsp of Sea Salt

Rough chop your Yellow or Orange Pepper, Onion, Cucumber and Mango into Chunks. Add to your Food Processor with Agave Nector and Salt. Pulse until it's the consistency of Pickle Relish (don't puree unless you want a Cucumber Mango Salsa? Maybe but not this time). Serve immediately or store in a Balls Jar or covered container to give the flavors time to enhance and blend into one another. Either way it's Delicious!
