"Falafel Burgers w/ Cucumber Dill Sauce"
I love Falafel! I make Sweet Potato Falafel Sandwich's (I love adding Sweet Potatoes wherever I can) that are delicious. Every now and then sticking to the original is the way to go. These Burgers take 15 minutes to get into a pan and 15 minutes to get on to a plate. If you are on the go all the time but want something healthy and delicious for the family in 30 minutes, this one is for you. It's back to the basics with a little tang from the Cucumber Dill Sauce.
I don't have these on a bun, I enjoy them on a bed of Spinach or Wild Lettuce but you can use Pita Bread, a Hearty Grain Bread or a Bun, either these patties are sure to please. The Falafel Burger is Gluten Free, Soy Free, Dairy Free (and of course meat free...duh) but the Cucumber Dill Sauce is made with Veganaise which has Soy in it. This easy recipe is YUMMAAY! Enjoy!
What You Will Need:
Food Processor
Ingredients: 16 Prep Time: 30 Minutes Makes: 5 Burgers
Burgers
1 15 oz can of Chickpeas rinsed and dried
1 small rough chopped Red Onion
1 Flax Egg
1 Clove of Garlic
1 handful of fresh Cilantro
1 tbsp of Sesame Seeds
Juice of Half a Lemon
1/4 tsp of Sea Salt
1/2 tsp of Italian Seasoning
1/2 tbsp of Cumin
1/2 tbsp of Coconut Oil
Sauce
1 large Sliced Cucumber
1/2 tbsp of Dried or Fresh Dill
3/4 cup of Veganaise
1/4 cup of Tahini
Juice of 1/2 Lemon
1/4 tsp of Sea Salt
1/4 tsp of Ground Black Pepper
Add all the ingredients for your Burger except Flax Egg into a Food Processor and Puree until becomes sticky but there are still partial Chickpea pieces that remain. Empty mixture into a large bowl and add Flax Egg, mix together with your hands or a spoon until it's sticky enough to create a patty. Let sit while you heat a large Pan on Medium Heat and coat with Coconut Oil.
While waiting, do a quick rinse of your Food Processor and add all ingredients for the sauce to it. Puree until it's a spreadable consistency, if you would like it to be thicker add Tahini by the tsp. Your Pan should be hot enough to add your Burgers to it, cook on each side about 8 minutes until it's a Golden Brown. Remove from heat and serve.
