"Hungry Man Beet Burger"

This Burger is was and is amazing to me. I had no idea that Beets would make such a great Veggie Burger experience but it's a WONDERFUL SANDWICH!! It all started when my husband came home from a business meeting raving about this delicious massive "red" Beet burger he had. I personally don't enjoy hearing him talk about anyone else's food he enjoys more than mine so I had to come up with something. I tried three recipes and they were o.k but they didn't hold together well.

Eventually I decided to wing it and add my own spices and flair, what was created is what I like to call the "Hungry Man Beet Burger"! It's a rather large patty, it's rather large for a normal sized bun but that's what makes it so fun to eat. It's filling and has a sweet and sour taste which is unusual for a Burger however it is very good. Enjoy!

What You Will Need:

Food Processor

Ingredients: Prep Time: 1 hr Serves: 5 large Patties

1/2 cup of Lentils

1/2 cup of brown rice

1 cup of Water

1 medium sized Beet

1 medium sized Red Onion

1/2 cup of Oat Flour

1/2 tsp of Sea Salt

1/4 tsp of Pepper

1/4 tsp of Vegan Worstechire

1/4 tsp of Almond Butter

1/2 tbsp of Olive Oil

Rinse and drain Lentils and Rice, add to a pot with 1 cup of Water on high fire until boiling, turn down the fire to low and cover for 25- 30 minutes until rice and lentils have cooked all the way through. Shred your Beet and dice your Red Onion and set to the side in a large mixing bowl. When the Rice and Lentils are done add it to the bowl and then add Oat Flour, Sea Salt, Pepper, Vegan Worstechire and Almond Butter. Mix thoroughly and make into patties. Pour Olive Oil into a skillet on Medium High Heat and let sit for 3-5 minutes until warm. Add patties and cook on each side for 10 minutes or until it has nice crispy texture on top. Let cool for 5 minutes and serve.
