"My Chana Masala"
I was introduced to Chana Masala years ago and frowned! I thought to myself "what is that". Well, once I decided to become a Veggie Head I had to be willing to explore more variety with my palate. I was invited to a function a year or two ago and Chana Masala was on the menu, I thought it was one of the most delicious things I had ever tasted and I was determined to make it. Today this is one of my most requested dishes from family, friends and customers alike. You can pair it with Basmati rice, Brown preferrably, plain Brown Rice or Wild and Brown Rice just as I have this time around.

Ingredients: 9 Prep time: 30 minutes Serves: 5
2 15 oz cans of Chickpeas drained and rinsed
1 28 oz can of Diced Tomatoes
1 Sliced Jalepeno Pepper
1 Sliced Sweet Pepper
1 medium Yellow Onion diced
1 tbsp of Ground Ginger
1 tbsp of Ground Cumin
2 tbsp of Garam Masala
1/4 tsp of Salt
1/2 tbsp of Coconut Oil
Directions:
Add 1/2 tbsp of Coconut Oil to a Large Pot that is already heated on Medium Heat, after oil has spread add Onions, Sweet and Jalepeno Peppers. Let Saute for 5 minutes before adding Ginger, Cumin, Garam Masala and Salt and let it go for 5 more minutes. Add your can of Diced Tomatoes and let it cook for 10 minutes, add Chickpeas and let it cook without a top for another 10 minutes on Medium High Heat. Serve
