"Spicy Lentil and Onion Wrap"


They say a picture is worth a thousand words but a picture can't truly capture how delicious this Wrap is!!! It's so very good, you can't eat just one. The Lentils are slow cooked to perfection and the Veganaise, Avacado, Lettuce and Tomato are an excellent complement of flavor to the sandwich. This is not a 10 minute dish but it's worth every second and the benefit of cooking any bean is that you don't have to sit and baby sit it at the stove, rinse, drain, set a timer and boil and you've got a tasty side of protein for breakfast, lunch or dinner. Enjoy!

Ingredients: 12 Prep Time: 40 minutes Serves: 6

6 Whole Wheat Wraps

1 cup of rinsed and drained dry Lentils

3 1/4 cups of Water

1 medium Onion

2 small Jalepeno Peppers

1 Not Beef Bullion Cube

1/4 tsp of Cumin

1/4 tsp of Coriander

1/4 tsp of Sage

1/4 tsp of Veganaise

1 ripe Avocado

1 Tomato

6 to 7 sprigs of lettuce

Directions

Rinse, separate and drain Lentils then add to a pot with 3 1/4 cups of water. Turn the heat on Medium high until boiling, once it begins to boil turn the heat to low and put a top on it, let them cook for 15 minutes. After 15 minutes add you Jalepeno Peppers, Onion, Not Beef Bullion Cube, Cumin, Coriander and Sage and cook for another 10-15 minutes. Turn off the fire when it's still somewhat of a juice left in the pot, do not cook out all of the water and let sit for another 5 minutes with the top off. While it's sitting set up your sandwich, spread the Veganaise on the bottom, add the Lettuce, Tomato and Avacado down the middle of the Wrap. Spread the Beans on top of that, fold over and wrap with Deli paper or use a toothpick to keep it together. Eat and ENJOY!!!
