"Vegan Pita Pizza in 15 minutes"
Anytime I am hungry and have a little time this is a go to for me, so much so that my 12 yr old son makes this for the family for dinner (that's right, my 12yr old cooks and my 13yr old too)! It takes no more than 15 minutes to make however if you don't like your Vegetables with some crunch and texture (I love it) let it bake for 5 to 10 more minutes. This is a simple one....ENJOY!
Ingredients: 12 Prep Time: 15 minutes Serves:1
1 pack of Wheat Pita Bread
1 cup of rinsed Baby Spinach
1/2 sliced Sweet Yellow Pepper
1/2 Sliced Green Pepper
1/2 cup of sliced White Button Mushrooms
4 Cherry Tomatoes cut in half
1/4 sliced Red Onion
1/2 cup of Crushed Tomatoes
1/4 tbsp of Balsamic Vinegar
1/4 tbsp of Italian Seasoning
1/4 tsp of Cracked Black Pepper
1/4 tsp of Pink Himalayan Sea Salt
1/4 tsp of Olive Oil
Preheat your oven to 410 Degrees. Add Crushed Tomatoes, Balsamic Vinegar 1/2 of your Italian Seasoning, Cracked Black Pepper and Pink Himalayan Salt to a small skillet and place it over medium fire. Drizzle Olive Oil on top of the Pita Bread and put in the oven for 3 minutes. Take Pita Bread from the oven and add toppings, it works best with the Spinach on the bottom. Sprinkle remaining seasonings on top of the dressed Pita Pizza. Place in the oven for 10 minutes. Best served warm (don't burn your tongue, I have)
