"Raw Vegan Vanilla Klondike Bites"
These are such a cute flavorful little snack. I never liked Bon' Bons' when I ate dairy but what I did like was Klondike Bars and this creamy confections satisfies the craving. It's semi- sweet taste is reminiscent of a cross between an Almond Joy and a Klonkike bar. They are wonderful to have around on a hot day to have an easy Ice cream that won't get you messy dripping everywhere. I love this recipe and am happy to share it with you..ENJOY
Ingredients: 10 Prep Time: 35 minutes Serves: 13 Bites
Ice Cream
1 cup of Soaked Cashews (for 2 to 3 hours)
1/2 cup of Organic Coconut Milk
1/2 Cup of Plain Almond Milk
1/4 cup of Organic Grade B Mayple Syrup
1/4 tbsp of Organic Vanilla Extract (not alcohol based)
1/4 tsp of Nutmeg
A pinch of salt
Chocolate
3/4 Cup of Raw Organic Cacoa Powder
1/2 Cup of Melted Coconut Oil
1/4 Cup of Raw Blue Agave Nector
Directions
In a High Speed Blender add Cashews, Nut Milks, Mayple Syrup, Vanilla Extract, Nutmeg and Salt. Blend for 5 minutes or until completely smooth, pour into a bowl or Pyrex dish and cover. Let freeze for 15-20 minutes or until solid but soft enough to scoop. Use a smaller Blender with cups such as the Magic Bullet or rinse out the High Speed Blender and add ingredients for your chocolate. You want to wait until after your Ice Cream has frozen to do this because the Candy will harden within 10 minutes of being made. When the Ice Cream is ready use a melon ball scoop or a rounded tbsp measuring spoon and create a ball with every scoop. Drop it into the chocolate and make sure it's completely covered. Scoop it out and sit it on a plate. The chocolate will dry within seconds. Continue to do this until you have used all your Ice Cream and freeze or eat right away.
