"4 Ingredient Raw Pecan Pie Ice Cream"


It's almost the end of summer, so I've been getting my Ice Cream fix a lot lately and this is another one to add to the roster of Raw Ice Cream Yummy-ness that I've been indulging in and....guilt free might I add. This one is incredibly simple, no sweetener needed. I won't drag this Blog on and on, let's get right to it!

Ingredients: 4 Prep Time: 30 minutes Serves: 3

1 cup of Raw Unsalted Pecans (1/2 cup Soaked for 3-4 hours)

3/4 cup of Organic Coconut Milk

1 cup of Pitted Dates (Soaked for 3-4 hours)

1/4 tsp of Ground Nutmeg

Directions:

Drain liquid from Dates and Pecans. Add soaked Pecans, Dates, Coconut Milk and Nutmeg to the Blender and let it blend for five minutes or until smooth. Pour into a Bowl that you can cover and put in the freezer, add remaining half of Pecans into the mixture and fold them over into the Ice Cream. Freeze for 25-30 minutes and serve cold.
