"Chase's Quinoa and Broccoli Wrap"
If your like me, you want to make sure that your children have something healthy to snack on to get them through the day and this is a favorite. It's simple to make, it can be refrigerated for the next day as leftovers and it fits right in a back pack or snack bag.
This is one my daughter loved! We made this one together, she took the pic and she forgot to Blog it so I will do it for her.
Ingredients: 8 Prep Time: 30 minutes Serves: 5 wraps
1 cup of Quinoa
1 cup of fresh Broccoli florets
2 cups of Vegetable Broth
Medium sized Multi Grain tortilla wraps
Cheeze Sauce
1 cup of Sunflower Seed (soaked for three hours)
1/4 cup of Nutritional Yeast
1/3 cup of Steam Distilled Water
1 tsp of Tahini
Bring 2 cups of Vegetable Broth, Broccoli Florets and Quinoa to a boil in a pot. Once boiling turn it down and let the liquid cook off. Make you cheeze sauce by adding the ingredients into a blender. If it's thinner than you would like add a little more yeast by the 1/2 tsp. Set cheeze sauce to the side. Once the liquid is cooked off, add the cheeze sauce to the pot the Quinoa mix is in and stir until mixed. Add into the middle of the wrap with lettuce, tomato, Coconut Bacon or whatever you would like! Wrap it up and you've got a sandwich, you can refrigerate this for a few days for snack when your kids come home from school as well! Enjoy!
