"Curried Beans and Kale Burger"
I have found that the best thing about being a Vej Head is my ability to come up with creative meals based on what I have left over from Dinner, Lunch or even Juicing and in this case it all applies. I had some Black Eyed Pea's left over from the night before and Kale from a morning of Juicing and after a long Bike ride, the last thing I wanted to do was try to chop, peal or bake. I reached in the fridge and got the Beans, Kale, added a 15 oz can of Canellinni Beans and 2 tbsp of Spelt Flour, seasonings and Voila! I told my husband when I was cooking it it smelled like fried Chicken to me. He laughed and said "uh, sorry honey, it doesn't smell like fried Chicken but it does smell very good"! Even though it doesn't taste like it either, it's very good and I don't miss the HBP, possibility of Salmonella or Diabetes that Fried Chicken contributes to. ENJOY!
Ingredients: 9 Prep Time: 20 minutes Serves: 5 Patties
1 cup of cooked Black Eyed Beans (if there is broth that the beans have been cooked in, use this as well to add flavor)
1 15oz can of Cannellini Beans drained and rinsed
2 cups of fresh Curly Kale
2 tbsp of Spelt Flour
1 tbsp of Curry Powder
1/2 tbsp of Garlic Granules
1 tsp of Onion Powder
1/4 tsp of Pink Himalayan Sea Salt
1/4 tsp of Olive Oil
Heat a large skillet over medium heat. Once the skillet is warm, add Olive Oil. In a large bowl mix all the ingredients above, smash the beans with your hand and form a patty. Place four patties or as many can fit in the skillet 8 minutes each side or until it has a nice Brown crust. Serve with on a Whole Wheat Bun or Bread.
