"Lentil, Potato and Sesame Kale Bowl (Pitta Bowl)"


We are currently transitioning from Summer to Fall here in Michigan. Even though the weather doesn't agree because it's been hot, hot, hot my body is requiring more hearty meals. I truly enjoy Sesame Kale, it's easy to make and it's tasty but it's best made with Tuscan Kale because it maintains it's earthy, full bodied texture next to these stewy type Vegetables. There is a three step process in order to keep the Potatoes from becoming too soft and maintaining it's texture as well but it's well worth it!

I call this bowl the "Pitta Bowl" because in Ayurvedic Medicine my body type would be considered "Pitta" and for the way I was feeling and the day I was having this hit the spot! ENJOY!

What You Will Need:

Wok

Ingredients: 11 Time: 1 1/2 hr Serves: 8

3 large Carrots chopped

1 lb of small red potatoes diced

1 bunch of chopped Tuscan Kale chopped

3 stalks of Celery chopped

1 Cubanel Pepper, diced

2 Cloves of fresh Garlic Minced

1 bag of lentils (rinsed and drained)

3 tbsp of Organic Soy Sauce

1/2 tbsp of Garlic Granules

1 tbsp of Sesame Seeds

2 Not Beef Bullion Cubes

Place 8 cups of Water, rinsed Lentils, Celery, Cubanel Pepper and minced Garlic in a Large Pot and let boil for about 35 minutes. Boil Red Potatoes for 20 minutes with just enough water to cover the top and put the top on it. While waiting on the potatoes, you can prep your Kale, heat your Wok or a deep pot for 2 minutes. Then add Soy Sauce, Garlic Granules, Sesame Seeds and Kale, let it go with the top on for 5 minutes. Your Wok or Pot should be on Medium Low Heat. Uncovered toss the Kale into the Soy, Garlic and Sesame seeds for about 2 more minutes to make sure it's completely covered in the sauce. Turn off set to the side and keep covered so it can continue to steam. When the potatoes are done, turn the Wok or Pot back onto medium low heat, make sure the potatoes are not overcooked, maybe slightly al dente' for texture and add to the Wok. Cover for five more minutes and toss the potatoes with the Sesame Kale until it's covered in sauce. Keep covered, turn off heat and set aside. By this time your Lentils should almost be done, add your 2 Bullion Cubes to the Lentils and continue to let it boil. It should create a soft almost gravy like broth for your Lentils. Let them cook for another 10 minutes. Do not add Kale and Potatoes to your pot of Lentils, serve them together in one bowl but if you add it to the pot it will be much to salty. CHOW DOWN!
