"Millet Tabbouleh"
I truly enjoy Tabbouleh! I went over a friends house recently and they offered me some made with Quinoa instead of Split Wheat. I figured that if I could make it with Millet and you know what, it turned out to be even more delicious than I assumed it would be. It also made a beautiful dish, it's colorful, light and full of flavor. ENJOY!
Ingredients: 8
1 cup of cooked Millet
2 Cucumbers peeled, seeded and diced
2 tomatoes seeded and diced
1 Red Onion
Juice of 2 fresh squeezed Lemons
1 Bunch of Parsley Chopped
Salt and Pepper to Taste
