"Whole Wheat Banana Bread"
Get ready to get your hands dirty!!! For me this was a messy one but it was totally worth it. I enjoy Banana Bread, in fact I love most Breads but I really don't eat it unless I make it myself. I have found that packaged Breads have Chemicals they use as Dough softeners, Glycerin in forms I have never heard of (Datem) Triglycerides, the list goes on and on. Because of this I have become a bit of a baker. The tricky part about making breads is that I rarely use Sugar, low Glycemic sweeteners like Raw Blue Agave and Maple Syrup, even Dates are go to for me so you have to find a balance between making it not sweet enough and far too sweet. The Banana works to balance out this bread wonderfully. Enjoy!
What you will need:
A Basic Pyrex Bread Dish
Ingredients: 7 Prep Time: 1hr Serves: 10 slices
3 ripe bananas
2 flax eggs (6 tbsp of ground flax and 8 tbsp of water)
1 1/2 cup of Whole Wheat Flour
1/2 tsp of Nutmeg
1/4 tsp of Baking Soda
a pinch of Baking Powder
1/4 cup of Raw Blue Agave Nector
1/4 tsp of Olive Oil
Preheat your oven to 335 Degrees. In a large bowl mix all your dry ingredients and set to the side. In a smaller bowl smash up your Banana's and mix it all your wet ingredients. Make a well in your dry ingredients and pour the wet into it (here comes the mess). Fold over your dry ingredients into your wet, keep doing that until it's a nice sticky. Dust your Pyrex Bread Pan with Flour and pour the contents into it. Bake for 45 minutes.
