"Vegan Shepard's Pie"


This awesome recipe is hearty, easy to make and great for a quick "budget" meal. You will probably have the majority of the ingredients on hand at any given time which makes this a great go to dish after a long day when your just looking to "Netflix and Chill" with the family. ENJOY!

Ingredients: 10 Prep time: 1 hr Serves: 5

3 medium sized potatoes peeled and diced

1 medium onion diced

4 carrots peeled and chopped

3 stalks of celery, chopped

7 sliced mushrooms

1cup of crushed tomatoes

1 cup of water

1 not chicken bullion cube

1 clove of minced Garlic

1/2 tbsp of Olive Oil

1.Place the chopped potatoes in a pot and fill the pot with water enough to cover the potatoes put it on the stove on medium-high heat and cover.

2. In a large pan add olive oil and garlic over medium-high heat, cook for about 3 minutes and the celery onions and carrots to the pan. Let it saute for 10 to 15 minutes, add bullion cube and crushed tomatoes and cook for 15 more minutes.

3. Add to Add contents from the pan to a baking dish and set aside.

4. With a fork poke through a potato to see if it's tender. Strain off the water, mash the potatoes well and add salt and pepper if you like foe additional flavor.

5.Spread the mashed potatoes on top of the veggies in the baking dish evenly and broil for 10-15 minutes. Remove from broiler and let sit for 10 minutes. Serve
