"Spicy Vegan Quinoa Chili"


Simple, Delicious and your new favorite Vegan Chili recipe! That's what this is. I make three different kinds of Vegan Chili but this one was born out of my husbands desire for a more hearty Plant Based Chili and my desire to see him smile. We found a happy medium in this dish, it's not so hearty that I feel like going to sleep after eating or so light that you have to have two bowls to be satisfied. You will not miss the meat at all, I certainly don't and nor do my many patrons who visit me just to buy that's right "buy" a bowl of this tasty chili. ENJOY!

Ingredients: 10 Prep Time: 30 minutes Serves: 8 bowls of Chili

1 cup of cooked Quinoa

1 15 oz can of Black Beans

1 sliced Jalepeno Pepper

2 tbsp of Cumin

2 tbsp of Chili Powder

1/4 tbsp of Garlic Powder

1/4 tbsp of Onion Powder

1 32 oz can of Diced Tomatoes

1 chopped green pepper

1 chopped Onion

1/4 tsp of Olive Oil

In a large Pot over Medium High Heat add chopped Onion, Green Pepper, Sliced Jalepeno, Chili Powder, Garlic Powder, Cumin and Chili Powders. Let simmer until Onions are tender. Add Diced Tomatoes, Black Beans and let cook for another 10 minutes, lightly mash mixture to create juice from the Tomatoes. Stir in Quinoa and cover for 10 more minutes. Serve with Tortilla Chips or Crackers.
