"Cashew, Cacao Ice Cream"

This is a wonderful and easy way to start a cold winter's day! Winter in Detroit doesn't seem much like it used to be. Some 50 degree days, then it's right back to freezing snow but... on those 50 degree days it's nice to know that you can treat yourself without defeating yourself! (Oh the corny is back!) This is simple, soft serve and lightly sweet Cacoa Ice Cream, Cashew Cacoa to be exact. That means it has Manganese, great for building bone, Iron, great for the blood and it's sweetened with Agave Nector so it goes easy on the kidney. This is a Yummy one for those who don't like it too sweet and of course if you need more sweetness add more Nector or maybe even Date Paste...oh that's a good one. ENJOY

Ingredients: 5 Prep Time: 1 hr Serves: 4

2 cups of raw cashews soaked overnight

3/4 cup of Steam Distilled Water

1/3 cup of Organic Coconut Milk w/fat

1/4 cup of Raw Blue Agave Nector

1/3 cup of Raw Cacoa Powder

Add all ingredients into a High Speed Blender and Puree for 2 minutes, Blend on High for 5 minutes or until completely smooth. Freeze for 45 minutes and let sit out after freezing for 5 minutes. Serve it up by the scoop!!
