Curried Chickpea Salad Sandwich
Here's a simple recipe that can be made by someone who has no time for "Kitchen Play". It's loved by Plant based livin folk and Meat eaters alike. It literally takes about 15 minutes to create. I have another Chickpea Salad recipe that takes a little longer to create and in fact it was my first recipe video. That was a few years ago and though it's still delicious, I've gotten a little busier with the Teenagers and all so they aren't interested in Mom making things cute and fussy. They just want to eat and this hits the spot.
What you will need:
1 15 oz can of Chickpeas, rinsed and drained
1 stalk of Celery, finely chopped
1/2 cup of soy free veganaise
1/2 tbsp of dried Dill Weed
1/4 tsp of Pink Salt
1/4 tbsp of Black Pepper
1/4 tbsp of dried Tumeric Powder
Directions:
In a large bowl smash Chickpeas as much as possible (potato masher works best). Stir in Veganaise until Chickpeas are completely covered. Add all seasonings and stir them in. Refrigerate or serve as is between two pieces of bread, a pita or with crackers. Either way, eat and enjoy! ashe
