Recipie: Chickpea Salad Sandwich

This recipe has become a staple in my home. It's one of those rare times when the children request something good for them. My first time trying this recipe I followed directions to the letter and found that it was too "Garlickey" (I'm aware that's not a word) and quite bland. So I added a little more veganaise lightened up on the Garlic and and added a whole Dill Pickle and viola! The celery and onions make it remeniscent of a Chicken Salad.

One thing I love about this recipe is that it's so simple that you can tone it up or down in seasonings as you please and it will still be delicious. After the video was complete I couldn't wait for lunch and with the Blue Corn Chips and Gaucomole it was a home run. Hey, who says you have to be a "health nut" to eat "healthy", this recipe is good for vegans, vegetarians and meat eaters all the same.

Step out of your comfort zone and give it a go. You won't regret it..Peace
