"Raw Coconut Banana Bar"
My journey to wellness was very challenging in the beginning because I have a major sweet tooth. I had a thing for mini candy bars like Krackel or Hershey's with almonds. Of course both of those are filled with processed sugars and absolutely no nutrients so I had to say goodbye!
Raw Desserts have been a pleasure to experiment with and I have managed to come up with some wonderful recipes that my family and I enjoy. The "Coconut Banana Bar" is one of my favorites. It has a candy Almond crust and a creamy filling made with Coconut Milk and sweetened with Bananas.
This tasty treat makes a wonderful snack in between meals with some fruit or an Avacado Chocolate pudding or both, Enjoy!
What you will need:
Food Processor
8x8 inch baking dish
Ingredients: 8 Prep time: 20 minutes
Crust
1 1/2 cup of raw Almonds
2 tsp of soft Coconut Oil
1/4 cup of Raw Blue Agave Nector
1 tsp of Cinnamon (preferrably organic Saigon)
Filling
3 ripe Banana's
3/4 cup of Coconut milk (full fat, shake the can to make sure it's creamy)
1/4 tsp of Nutmeg
1/4 tsp of Vanilla Extract
1 tbsp of soft Coconut Oil
Pour the Almonds in the food processor. Puree until it's the consistency of sand.
Pour the rest of the ingredients for the filling into the food processor. Puree until it becomes small bunches of sticky nuts.
Spread the filling onto the bottom of your baking dish. You can pat it down with the palm of your hand or a wooden spoon.
Place that in the freezer while you prepare the filling. Wipe our the food processor then pour in all the ingredients for the filling together. Puree until it's a smooth and creamy texture. Take your filling out of the freezer and pour the filling directly on top. Put the dish back in the freezer for 1 hr(the longer you let it freeze the longer it will stay together). Serve frozen because it will melt quickly.
