Banana's 3 ways!

I LOVE BANANAS!! My children, my husband and I will go through three bunches of Banana's in a weeks time. They are such a versatile fruit and they are a store house of power minerals like potassium, fiber and Vitamin C. As good as they are, sometimes the taste of them get old...literally. Banana's go bad rather quickly, especially the organic ones. When I transitioned from "unhealthy foodie" to a "fresh foodie" I realized that my eyes were bigger than my stomach. I was unable to consume much of the fruit that I had bought. Considering how much I love Banana's you can imagine how sad I was when I had to throw them out.

In an effort not to waste money or any of God's precious foods I had to figure out a way to preserve them. Eventually I decided to slice them, put them in a ziploc bag and freeze them when they begin to turn brown. While coming up with different uses for frozen Banana's I found that they are one of Mother Earth's best natural sweetners and in some cases these creamy, starchy fruits can be used to replace milk or eggs in recipes. Here are three AWESOME ways to use frozen sliced Banana's that are fast, fun, FRUIT-TASTIC!!

"My Sun's Smoothie"

Everyone has gotten in on the action of healthy eats in my home including my eleven yr old Sun! He loves fruit so he came up with his own recipe for his favorite smoothie. When I told him I would be sharing it he was excited! So we are delighted to share this delicious smoothie with you.

1 cup of frozen Banana's

1 peeled, cored and sliced Apple

1/2 cup of Blackberries

1 cup of fresh squeezed or Organic OJ

1 cup of Steam Distilled Water

"Spinach Sunrise Smoothie"

Green smoothies are wonderful but most of them are full of green fruits like kiwi, green apple and Honeydew Melons. I have made a few smoothies with kale and brocolli tops and I didn't like either of them. This recipe is yummy! I get my daily greens for iron and a double dose of potassium from the Banana and Pineapples.

1 cup of chopped Pineapples

1 chopped frozen Bananas

1 handful of Spinach

2 cups of Unsweetened Almond Milk

Banana Pecan Ice Cream"

One of my favorite things to make with frozen Banana's is this easy dairy free ice cream. It's creamy, sweet and you can freeze it for about a week and it will still be just as good.

3 frozen Banana's

1 cup of Unsalted Pecans soaked for an hour

1 cup of Unsweetened Almond Milk

1/4 tsp of Vanilla Extract

1/2 tsp of Nutmeg

Directions:

Put all your ingredients in a food processor. Puree for 5 minutes for Ice Cream with a little texture and chunks of banana. If you want it smooth blend for 7-8 minutes. Freeze for 1 hour and serve.
