"Vegetable Fried Quinoa"
Vegetable Fried Rice has to be a favorite among most. It's simple, quick and delicious and using Quinoa is an awesome addition to this dish. Quinoa is a perfect little grain, full of fiber and Protein. It takes on the flavors of Vegetables very well and I use it to replace Rice on many different occasions and I am always pleased with the outcome...ENJOY!
Ingredients: 9 Prep Time: 30 Min Serves: 4 (bowls)
1 1/2 cup of Quinoa rinsed and drained
3 cups of Water
1/2 cup of shredded Carrots
1/2 cup of Bean Sprouts
1 cup of Fresh Broccoli Florets
1 medium Yellow Onion
2 tbsp of Soy Sauce
1 tbsp of Rice Vinegar
1 bunch of Green Onions chopped
Add Quinoa and Water to a mediums sized Pot, cook until boiling. Once it begins to boil, turn it down to low heat and cover it until the water cooks out and sit to the side. Heat a deep Pot or Wok (Woks work best) on Medium heat. Add Soy Sauce and Vinegar and let it begin to bubble, add all the veggies except Green Onions and Bean Sprouts and cover. Cook for 10-15 minutes or until Broccoli is a nice green color. Add Quinoa, Bean Sprouts and Green Onions and sautee' for 8 minutes. Add a little water to the Wok, mix the contents of the pot with the sauce created by the water and cover for 5 more minutes. Cook with the top off for three additional minutes and serve.
