I LOOOOOVVVE TACOS! Since I was a little girl Tacos were a delicacy in my house. Both of my parents were sweet and hot lovers so they'd grab some Ground Beef, Onions and Open Pit barbeque sauce, cook it up and put it in whatever taco shells we had. Those were some of the best memories of my life however, both of my parents have dealt with illnesses that were onset by a die-it full of foods high in Saturated Fat.
I've tried Chickpea tacos and they were good, I tried Bean Tacos and they were great but then I tried raw tacos and I felt like I was a little girl again! I imagined I was sitting at that dining room table waiting for my mom to bring out one of my favorite meals so I had to do a video for this recipe. If you season the pureed nuts just so, it will taste like a finely ground meat.
What makes this dish a real winner is it's nutritional content. For every 45 postacio nuts there are 6 grams of protein, it's high in fiber and it's great for those who have arthritic discomfort. Walnuts...well, where do I begin? They are high in Omega 3 fatty acids, calcium, magnesium and both Postacios and Walnuts are full of Potassium which make them heart foods. The heart needs Potassium to keep it pumping out a beautiful love song without skipping a beat (get it, yes I'm a cornball).
I like using soft taco shells because generally they are just ground up unseasoned masa (corn flour) which is a vegetable (according to the Whole Grain Counsel it's one of the highest in antioxidants). The method of putting them in the oven to give them that crunch is awesome and fun, I mean really, who doesn't love hard tacos. I eat fruit like apples and bananas after the meal because they aid in digestion and some people may have problems digesting corn.
